Haitian Spaghetti: A Wholesome Fusion by Nutmeg Café

At Nutmeg Café, we believe that the true essence of a meal is not only in its taste but also in the memories it creates. This Haitian classic, infused with our unique twist, takes you on a culinary journey that celebrates hearty simplicity, invigorating spices, and a fusion of cultures. This is our homage to a dish that brings comfort, convenience, and a touch of Caribbean zest to your table.

Ingredients:

For the Flavorful Base:

  • 1 pack Sweet and Mild Italian sausage or Andouille Sausage, charred and sliced

  • 1 sweet onion, chopped

  • 1 habanero pepper, chopped

  • Handful of fresh basil, chopped (plus extra for garnish)

  • 1 16oz cart of grape or cherry tomatoes, charred in olive oil

For the Spaghetti:

  • 1 16oz box of spaghetti noodles

  • 1 teaspoon seasoned salt

  • ½ teaspoon cayenne pepper

  • ½ teaspoon chili powder

  • ½ teaspoon black pepper

  • ½ teaspoon red pepper flakes

  • 1 tablespoon brown sugar

  • 1 8.5 oz jar of sun-dried tomato halves in oil, along with the oil

  • 1 can of Tomato Basil Sauce (about 2/3 of the can)

  • 1 cup water (may need more)

Instructions:

  1. In a separate pan, char the sausage skins until they're lightly crisped. Allow them to cool before slicing them into rounds.

  2. In the same pan, char the grape or cherry tomatoes in olive oil until their skins have a beautiful charred appearance.

  3. In a large pot, sauté the chopped sweet onion and habanero pepper until fragrant and slightly caramelized.

  4. Add the charred sausage slices, chopped basil, and the charred tomatoes to the pot. Pour in the oil from the jar of sun-dried tomato halves.

  5. Stir in the seasoned salt, cayenne pepper, chili powder, black pepper, red pepper flakes, and brown sugar.

  6. Pour in the Tomato Basil Sauce, and then use 1 cup of water to scrape up any flavorful bits from the bottom of the pot.

  7. Break the spaghetti noodles in half and add them to the pot, making sure they're fully submerged. Add more water if needed to prevent burning.

  8. Simmer the mixture, stirring occasionally, until the spaghetti is cooked to your desired level of tenderness.

  9. Serve the Haitian Spaghetti in bowls, garnished with fresh basil leaves.
