Ingredients:

For the Sweet Potato Soufflé:

  • 1 cup organic cane sugar

  • ½ cup brown sugar

  • 1 tablespoon vanilla extract

  • 1 cup heavy cream

  • ½ cup whole milk

  • ½ cup granulated sugar

Instructions:

  1. Prepare the Sweet Potato Soufflé: Follow the steps of your existing sweet potato soufflé recipe, including boiling, seasoning, and baking. Once baked, allow the soufflé to cool completely.

  2. Make the Sweet Potato Base: In a blender or food processor, blend the cooled sweet potato soufflé until smooth and creamy. Set aside.

  3. Prepare the Gelato Mixture: In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is warmed and the sugar is dissolved. Do not boil.
